It was tough doing this tag. I have so many favourite food and yet my mind was a blank when invited by earthember to write about what I like to eat. Perhaps Ramen if I have to choose.
I’m very particular about the stock used in ramen. My favourite has to be Tonkotsu which is similar to the Chinese baitang (白湯) and is a thick broth made with crushed pork bones that have been boiled for hours. It looks a little milky but don’t be fooled by the look. The taste is great!
I haven’t got the chance to eat ramen in Japan but the best ramen I’ve eaten in Singapore is a little eating place at Cuppage which is no longer around. Right now, Tampopo will have to suffice.



Yum! I love thick broth too for my noodles. Yeah, the milkier the better.
ee: Actually I don’t like it milky. Tonkotsu fortunately looks so but doesn’t taste so. I dislike Western soups that are too creamy or milky.

Exactly. Too many favourites to narrow it down to one.
DR: I was also thinking of chicken rice, chwee kueh, crab, baked potatoes, chocolates, ice cream…maybe fave junk food will be easier to do…

I remember you mentioned a place at Robertson Quay with good ramen but you must really try this other restaurant along the same stretch of Robertson Quay but closer to the end, near the road. The restaurant has a Chinese character type of Japanese name so I dont know the name (is that Tampopo you talking about?) but the tonkatsu there is out of this world! The soup is super yummy and the egg has a yolk that is nice and semi solid and the meat melts in your mouth. Simply heavenly!!!
fuzzoo: No, the place I mentioned before is Ichibantei and I think it has closed shop already. I must try this other place you say. Tampopo is at the basement of Liang Court.

Believe it or not, I have not came across any good Ramen yet. If i go back to Singapore, I will ask you for recommendations.

I know what u mean by 白汤… those are really 精华… you indeed is 美食天皇… but i find the tampopo too salty for me, I was pumping water after that leh ;p
